Easy Summer Fruits Crumble Recipe

Summer Fruit Crumble

A few weeks ago I wrote a post about growing rhubarb in a pot.  The rhubarb grew successfully and we are now eating the rewards

My fruit crumble recipe is so easy - it takes less that an hour to get from garden to table

  • Firstly, forage your garden (or the supermarket!) for whatever you can find 
  • Place a layer of the fruit at the bottom of an oven proof dish
  • Drizzle over a couple of spoons of honey
  • Add some juice - just enough to cover the bottom of the dish

And my secret ingredient, which of course is optional, but I like to add some basil leaves to the fruit - it really adds something to the flavour.

Now for the crumble mix - I don't have any scales so I do everything by throwing in ingredients until it looks right. 

  • Put a couple of large spoons of butter into a bowl
  • Add the same amount of brown sugar
  • Keep mixing and adding flour until your mixture looks like breadcrumbs - if it looks like pastry, you need to add more flour 
  • Tip over the fruit 
  • Sprinkle more sugar over the top
  • Cook in a medium oven until fruit is bubbling and crumble is golden.
